BBQ Chicken Lasagna

Noodles: 3 cups shredded cheddar cheese 6 eggs, or 12 egg whites Filling: 4 8-ounce chicken breasts, cooked and shredded 2 cups cheddar cheese, shredded 2 cans tomato sauce (Contadina Thick and Zesty) 2 tsp liquid smoke 1 tsp stevia glycerite OTHER OPTIONS: mushrooms, peppers, onions... Noodles: Preheat oven to 375 degrees. Grease 2 large lasagna pans. In a large bowl mix 4 cups of the cheddar with the eggs. Place into prepared lasagna pans into a very thin layer. Bake in oven for 20-30 minutes, or until golden brown...don't under bake though. Remove from heat and set aside to cool. Once cooled, use a pizza cutter to form lasagna "noodles." Prepare Sauce: Option - use prepared no-sugar added BBQ sauce. OR Place to cans of tomato sauce in a large bowl, add the liquid smoke and stevia; mix until combined. Set aside. Lasagna: Layer the bottom with 1 cup sauce. Layer with 1/2 of the noodles. Layer with 1/2 of the cheese, 1/2 the chicken. Add the rest of the remaining sauce. Top with the noodles, then chicken and top with the cheese. Bake in a 375 degree oven for 45 minutes, or until bubbly and the cheese is golden/brown. Let rest for 10 minutes before serving.
