Meatloaf with Sun Dried Tomatoes

Ingredients: 1 1/2 lb ground beef 1 cup sun-dried tomatoes in olive oil (diced and save the oil) 1 small-medium onion, chopped (equivalent to 1 cup) 2 cloves minced garlic 1 tsp salt/pepper 2 eggs 1/4 cup parmesan cheese (can be omitted and won't change it dramatically) mozzarella cheese- optional, if you like a cheese layer/filling in the middle Preheat oven to 350 F. Drain the oil from the sun-dried tomatoes into a large nonstick skillet. Finely dice the tomatoes and set aside. Finely dice the onion into one packed cup. Set the skillet over medium heat and add the diced onion and garlic. Cook slowly, stirring occasionally, until the onion is soft and golden, about 10 minutes. In a large bowl, combine the sirloin, eggs, diced tomatoes, cooked onion with all the pan juices, salt and pepper. [*be careful that the onion and juices aren't too hot when you add them to the mix so you don't start to cook the egg] Shape the mix into an 8x4 1/2 inch loaf pan and bake for 35-40 minutes. Serves 4.
